I cooked myself a small joint of roast pork the other day. Wanting the crackling crispy, I did the Jamie Oliver trick of heating the oven up to Mk9 before putting the meat in. It should have been turned down after twenty minutes but owing to what I can only describe as a senior moment, I remembered it after 90 minutes! The cracking was perfect but the rest of the joint was somewhat dry and a little on the black side :D  I am still battling my way through it though. Fortunately, Her Indoors is away for the week and may never need to know how I managed to get the pan clean after that little episode.
